Awesome lamb braai chops with crispy potato wedges and tenderstem broccoli

On a tour of the Northern cape and west coast this was our last camp meal after 16 days on the road. We were wild camping on the banks of the Doring river in Gifberg. This meal takes a bit of prep time on the wedges bit other than that it is pretty straight forward..

Ingredients: 

  • 2 loin chops per person
  • 10gr Adventurers Braai spice
  • 20ml olive oil
  • Oil for deep frying.
  • 300 gr starchy potatoes
  • 25ml white vinegar
  • 1 teaspoon bicarbonate of soda
  • 150gr Tender stem broccoli
  • Freshly cracked black pepper to taste
  • Salt to taste
  • 2gr Crushed garlic
  • 2gr fresh red chillies
  • 15ml XV olive oil
  • 20gr Parmesan cheese (like Grana Padano)

Step 1 Preparation

Start by seasoning your lamb chops with our WalkTheLineAdventurers braai spice and drizzle with a little olive oil. If you have space, place them back in your fridge to pull in all that flavor. Now place your pot over the fire and add water, salt, vinegar and bicarb. Add your wedges to this water and bring to the boil. 

Let the potatoes boil till just cooked. Remove the wedges from the water and cool as quickly as possible by spreading them out on a plate or tray. Even placing them in your freezer if you have space and the capacity.  Discard the water

Finely chop your chillies to the same size as your crushed garlic cloves and set aside.

Step 2 the fry up

Place your pot back onto the fire and add your frying oil. Let the oil heat up till almost at frying temperature, then add your wedges. The wedges will cool the oil. Be sure to check your fire not to let it sit in the cold oil too long, this causes more absorption of oil that is needed. Let the wedges fry till golden brown. On the side place a flat top or your favorite cast iron pan. Then saute till for about 5 to 10 minutes depending on how Al Dente you like your veggies.By now the wedges should be done and can be moved aside and removed from the oil, season with salt whilst still hot.

Step 3 Lets Grill

Over hot coals, grill your lamb chops to medium, then set aside to rest.

Step 4 Assemble the dish

This dish can be assembled simply on a wooden serving board or on platters if made for a group of people. 

Add some more wood to the fire then poor yourself your favorite drink and sit back and enjoy.
